Brinjal / Eggplant Stir Fry

Ingredients


Brinjal / Eggplant - 1 big (cut into small square pieces)

Onion - 1 (chopped)

Garlic - 1 (chopped)

Chilli powder - 1/2 tsp

Turmeric powder - a pinch

Pepper powder - 1/2 tsp

Curry leaves - a few

Salt - to taste

Oil - 2 Tbsp


Preparation Method


Heat oil in a pan.

Add onion and garlic and fry for couple of minutes.

Add brinjal and fry for about 3 - 4 minutes on a medium flame.

Add turmeric powder, chilli powder, pepper powder and salt, mix well and sauté for another 3 - 4 minutes.

Add curry leaves and mix well.

Enjoy it with rice.
