Carrot & Beans Stir Fry

Preperation Time: 10 min.

Cooking Time: 12 - 15 min.

Serves: 4 - 5

Ingredients


Carrot - 2 big (grated or finely chopped)

Beans - 500gms (finely chopped)

Grated coconut - 1/2 cup

Shallots(kunjulli) - 10

Green chilli - 4 (finely chopped)

Turmeric powder - 1/2 tsp

Salt - to taste

For seasoning

Oil - 1 tsp

Mustard seeds - 1/2 tsp

Curry leaves - a few


Preparation Method


Mix carrot, beans, grated coconut, shallots, green chilli, turmeric and salt with a spoon.

Heat oil in a pan and add the mixture into the pan.

Cover the pan with a lid and let it cook on a low flame for 5 - 6 minutes. (Stir occasionally to make sure that it doesn’t get burnt)

Open up the lid and cook for another 4 - 5 minutes on a low - medium flame and stir continuously until the water gets evaporated.

Turn the flame off and season it with mustard seeds and curry leaves.

Serve with rice.



Notes:

You can make the same recipe without using coconut.
