Cheera / Spinach Stir Fry with Coocnut

Serves: 2 - 4

Ingredients


Cheera (spinach) - 2 cups (finely chopped)

Green chilli - 2 (chopped)

Grated coconut - 1/4 cup

Turmeric powder - 1/4 tsp

Raw rice - 2 tsp

Mustard seeds - 1/2 tsp

Salt - to taste

Oil - 2 tsp


Preparation Method


Crush grated coconut, turmeric powder and green chilli into a coarse form. (Do not add water while crushing)

Mix chopped cheera along with the coconut mixture and salt.

Heat oil in a pan or a kadai.

Splutter mustard seeds and sauté raw rice.

Add the cheera - coconut mixture and mix well.

Cover and cook on a low flame for about 3 - 4 minutes.

Remove the lid and saute for another 5 minutes (stir occasionally) till it becomes dry and well cooked.

It goes well with the rice.



Notes:

Make sure that you don’t overcook spinach. If it gets overcooked, it tends to lose its colour.

Cheera(spinach) will reduce in quantity by half once it gets cooked.
