Coriander Leaves - Shallots Chammanthi (thick form)

Coriander leaves - 1 cup

Shallots - 12 (cut into half)

Garlic - 2 cloves

Ginger - 1/2 inch piece, sliced

Dry red chillies - 6 or to taste

Curry leaves - 1 stem

Grated coconut - 2 Tbsp

Tamarind seedless - a tiny piece

Salt - to taste

Oil - 2 tsp

Preparation Method

Heat 2 tsp of oil in a pan and add dry red chillies, curry leaves and saute for few seconds. Keep aside.

Then add ginger, garlic and saute for about a minute. Keep aside.

Now, add shallots(add extra oil if required) and saute till it turns golden brown. Keep aside.

Then add coriander leaves, grated coconut and saute for about 2 - 3 minutes.

Grind all the above mixture along with tamarind and salt to a thick paste.
