Kootu Curry / Mixed Vegetables with Roasted Coconut

Kootu means mingling or a combination, so as the name implies it is a mixture of brown chickpeas or chana dal and combination of vegetables like winter melon, raw plantain, yam with ground coconut and spices. This is prepared in different styles in different parts of Kerala and it is a semi dry preparation. Some use chana dal / kadala parippu instead of chick peas / kadala. Enjoy this dish with rice !!!

Serves: 4 - 6


Yam (chena) - 125gms, diced

Winter melon (kumbalanga) - 125gms, diced

Carrot - 3 pieces, diced

Brown chana(kadala) - 50gms

In some places, people use chana dal instead of brown chana. You can use either of these to your choice.

Jaggery - 1 small cube (grated)

Turmeric powder - 1/2 tsp

Chilli powder - 1  1/2 tsp

For grinding

Grated coconut - 3/4 cup

Jeera - 1/2 tsp

  Grind these to a smooth paste by adding just enough water.

For seasoning

Oil - 4 Tbsp

Mustard seeds - 1 tsp

Curry leaves - 1 stem

Grated coconut - 4 Tbsp

Preparation Method

Soak brown chana overnight.

Cook brown chana or chana dal in a pressure cooker with enough water. Drain excess water and keep the chana aside.

Cook yam, winter melon and carrot with enough water and salt.

When the vegetables are almost cooked, add salt, turmeric powder, chilli powder and jaggery.

Mix well until the jaggery is dissolved and then add the ground coconut paste.

Combine well and saute for a while. Then turn the flame off.

Heat oil in another frying pan and sputter mustard seeds and then add curry leaves.

When it starts to change its colour, add grated coconut and fry till it becomes golden brown.

Add this to the curry and mix well.

Enjoy it with rice..
