Mixed Vegetable Thoran / Stir Fry

Preperation Time: 15 min.

Cooking Time: 12 min.

Serves: 4

Ingredients


Carrot - 1, grated

Beans - 10, finely chopped

Cabbage - 50gms, grated

Green chilli - 3, slitted

Mustard seeds - 1/2 tsp

Urad dal - 1 tsp

Turmeric powder - 1/2 tsp

Salt - to taste

Oil - 2 tsp

Preparation Method


Heat oil in a pan and spultter mustard seeds.

Add urad dal and saute for a while.

Add all the vegetables, green chilli, salt and turmeric powder. Mix well. Cover & cook for about 8 minutes (under a low flame).

Open the lid and stir till all the vegetables get cooked and the mixture becomes dry.

Serve hot with rice..



Notes:

You can add grated coconut along with the vegetables if you like. But I prefer to have it without coconut.

You can use any vegetables you like.
