Serves: 4


Kumbalanga (ash gourd / winter melon) - 250gms (finely sliced)

Van payar (red cow peas) - 80gms, soaked overnight

Green chilli - 3 (slitted)

Thin coconut milk (2nd extract) - 1 cup

Thick coconut milk (1st extract) - 1/4 cup

Salt - to taste

Coconut oil - 1 tsp

Curry leaves - 1 sprig

Preparation Method

Soak red cow peas overnight and cook till soft. Make sure that it doesn't get overcooked. Keep aside.

Cook winter melon / ash gourd in thin coconut milk (2nd extract) along with green chillies and salt.

When it gets cooked, add cooked red cow peas and thick coconut milk (1st extract).

When it starts to boil, turn the flame off.

Add coconut oil and curry leaves on top.

Close the lid for 5 minutes to impart a good flavour to the curry.

Serve hot with rice.
