Paneer Tikka Masala / Baked Cottage Cheese in Creamy Sauce  ratingratingratingratingrating




Paneer Tikka Masala is a typical Punjabi dish made from chunks of paneer marinated in spices & yogurt then baked in a tandoor oven, served in an orange coloured sauce.  It is an Indian dish that is popular both in India and other countries.

I am quite a paneer lover and I cook paneer dishes for our dinner as an accompaniment to chapathi and my hubby always ask ‘paneer again!??’ But he does enjoy the dish.. well ,is there anyone who doesn’t like Paneer? I can definitely say no......I have tried 2 different versions of this dish but was not fully satisfied with both as I couldn’t get the right taste I wanted. This version is my modification of an on-line recipe. Hope you will like it…

Ingredients


Paneer - 250 gms (diced)

For marination:

Ginger garlic paste -1 tsp

Garam masala -1/4 tsp

Kashmiri chilli powder - 1 tsp

Kasuri methi ( dried fenugreek leaves) - 1/4 tsp

Yogurt - 3 Tbsp

Lemon juice - 1/4 tsp

Salt -  to taste

For the sauce:     

Onion - 1 medium, 100 gms (finely chopped)

Tomato - 1 big,150 gms

Cumin seeds - 1/2 tsp

Ginger -1 tsp (crushed)

Garlic -1 tsp (crushed)

Kashmiri chilli powder - 1 tsp

Coriander powder - 1 tsp

Turmeric powder - 1/4 tsp

Garam masala -1/2 tsp

Water - 1/4 cup + 3/4 cup (see measurements here)

Kasoori methi (dried fenugreek leaves) - 1/2 tsp

Yogurt - 2 - 3 Tbsp

Fresh cream - 1 1/2 Tbsp

Coriander leaves - 1 Tbsp (finely chopped)

Salt - to taste

Oil

Preparation Method


Mix all the ingredients 'for the marination' in a bowl and add paneer pieces into it and mix gently and keep aside for atleast 30 minutes.

Place this on a greased baking tray and drizzle oil on top. Bake this in a preheated oven (180 deg C) for 15 - 20 minutes till turn golden brown on both sides, turning sides in between (Time may vary depending on the oven).

Puree the tomato in a blender and keep aside.

Heat oil in a pan,add cumin seeds and when they begin to change colour, add chopped onions and sauté till it turns golden brown.(refer note)

Add ginger & garlic and sauté till lightly browned.

Add tomato puree and saute over a low - medium flame for about 10 - 12 minutes.

Reduce the flame to low and add kashmiri chili powder, coriander powder, turmeric powder and garam masala. (Add 1/4 cup water along with the spices whch will help to mix the spices easily). Saute this for about 3 minutes on a low flame.

Pour 3/4 cup of water and mix well. Adjust the salt and bring it to a boil.

Then add the yogurt, kasoori methi and mix well.

Add baked paneer cubes and cook for about 3 - 4 minutes.

Add cream and mix gently.

Turn the flame off and garnish it with coriander leaves.

Serve hot with naan or roti.



Note:

You can also chop the onion & grind it into a smooth paste using a blender and saute it in oil till the raw smell disappears (for about 12 min). This will give you a smooth gravy.
