Potato masala is a popular south Indian vegetarian dish. It is quick and easy to prepare. It is a very versatile dish that can be rolled in the dosa (masala dosa) or served as a side dish to poori or Chapathi or can be used as a filling for samosas.

The recipe I have written here is from my mom. She always makes masala for dosa and we have always liked it very much. I have had masala dosas from various countries and places but never as good as my mom’s. Hope I could do justice to her recipe.  Enjoy a mouth watering luscious dish which is sure to be a big hit with kids and adults!


Preperation Time: 10 min.

Cooking Time: 25 min.

Serves: 2 - 3

Ingredients


Potato - 250 gms (peeled and diced)

Onion - 1 big, about 170 gms (thinly sliced)

Green chilli - 2 (slitted)

Ginger - 1 tsp (sliced)

Turmeric powder - 1/4 tsp

Mustard seeds - 1/2 tsp

Curry leaves - 1 stem

Salt - to taste

Water - 1 cup (see the measurements here)

Oil - 2 tsp

Preparation Method


Boil the potatoes till it is half cooked and keep aside. I cooked in a microwave for about 4 minutes with 1/4 cup of water.

Heat oil in a pan and splutter mustard seeds.

Add ginger, green chilli and curry leaves and sauté for few seconds.

Then add onion and sauté till onion starts to change its colour. Onion doesn't need to turn brown in colour.

Add turmeric powder and sauté for a while.

Add boiled potatoes, salt and cook with 1 cup of water. (refer note)

When the potatoes get fully cooked, mash it slightly with a spatula.

When the gravy starts to thicken, mix well and turn the flame off.

It is used as a filling to Dosa. It can be served with Puri or Chapathi.



Note:

You can add more or less water according to your desired consistency of the gravy.
