Tomato Curry  




It is a very easy to make recipe using tomatoes and coconut milk. I always use Maggi coconut milk powder to make coconut milk. Just add warm water to the coconut powder according your desired thickness of the milk and mix well.

I saw this recipe from a TV show and thought it would go well with rice. Not mistaken - it was so tasty and I am sure that you all will also like it.. Enjoy!!


Preperation Time: 15 min.

Cooking Time: 30 min.

Serves: 4

Ingredients


Tomato - 4 medium, 500 gms (cut each tomato into 4 or 5 pieces)

Onion - 2 medium, 250 gms (thinly sliced)

Oil - 2 Tbsp

Green chilli - 2 (slitted)

Ginger paste - 1 tsp

Garlic paste - 1 tsp

Turmeric powder - 1/2 tsp

Coriander powder - 2 tsp

Chilli powder - 1 tsp

Water - 1 cup (see measurements here)

Thick coconut milk - 3/4 cup

Salt - to taste


Preparation Method



Heat oil in a pan on a medium flame and when it is hot add ginger and garlic. Sauté for few seconds.

Add onion and green chilli and sauté till onion turns golden brown.

Now turn the flame to low and add turmeric powder, chilli powder and coriander powder along with 5 Tbsp of water. Sauté for about a minute.

Then add tomato pieces and sauté for a while.

Add salt, water and cover the pan with a lid and cook on a medium flame for about 5 - 6 minutes. (Make sure that tomatoes don’t get mashed up)

Then add coconut milk and let it boil for couple of minutes.

Check salt and turn the flame off.

Serve hot with rice...
