Vegetable Stew in Coconut Milk

A mouth watering combination of veggies and coconut milk makes easy Vegetable Stew.  It is a healthy curry as it’s made of different varieties of vegetables.

I always like to have vegetable stew with chapathi or with Appam. Let’s check how my vegetable stew recipe goes….


Cooking Time: 25 min.

Serves: 4

Ingredients


Carrot - 2 (diced)

Potato - 3 (diced)

Green peas - 120gms

Onion - 1 (sliced)

Green chilli - 4 (slitted)

Cinnamon - 1 inch piece

Cloves - 4

Cardamom - 3

Thick coconut milk (1st extract) - 1/2 cup

Thin coconut milk (2nd extract) - 2 cups

I used Maggi coconut milk powder to make coconut milk.

Salt - to taste

Curry leaves - 1 stem

Oil - 1 tsp


Preparation Method


Heat oil in a vessel.

Add cinnamon, clove and cardamom and fry for a  minute.

Add onion, green chilli and all vegetables, mix well and fry for 2 - 3 minutes.

Add thin coconut milk, salt and cook for 10 minutes or till all the vegetables get cooked.

Then add thick coconut milk.

Mix well and just heat it through for about 3 minutes. (Do NOT boil).

Garnish it with curry leaves and serve hot.
