Achinga / Long Beans Stir Fry

Preperation Time: 10 min.

Cooking Time: 15 min.

Serves: 4


Achinga (long runner beans) - 250gms (chopped)

Shallots or Onion - 1/2 cup (finely chopped)

Crushed red chilli flakes - 2 tsp or to taste

Curry leaves - a few

Oil - 2 tsp

Salt - to taste

Preparation Method

Heat oil in a pan and add curry leaves and shallots and saute till it turns light golden colour.

Add red chilli flakes and saute for a while.(make sure that you do not burn the chillies)

Then add achinga along with salt and sauté for couple of minutes.

Sprinkle a little water on top and cover the pan with a lid and cook for 5  - 10minutes on a low flame. Stir occasionally to make sure that it does not get burnt.

Remove the lid and sauté the mixture for another 5 minutes until water drains out.

Serve with rice..


You can add grated coocnut along with achinga if you like.

It is always better to add shallots instead of onion as it tastes great..
