Kovakka / Ivy Gourd Stir Fry  


Kovakka (Ivy Gourd) - 500gms (slice length wise each ivy gourd into 4)

Shallots (kunjulli) - 3 (chopped)

Green chilli- 2 (slitted)

Onion - 2 (chopped)

Turmeric powder - 1/4 tsp

Chilli powder - 1/2 tsp

Coriander powder - 1/2 tsp

Salt - to taste

Oil - 2 Tbsp

Mustard seeds- 1/2 tsp

Dry red chillies - 2

Curry leaves - a few

Preparation Method

Wash and cut each Ivy gourd into 4 pieces lengthwise.

Cook this along with salt, green chilli, turmeric powder and 1 cup of water until soft. Drain excess water and keep aside.

Heat oil in a pan and splutter mustard seeds and saute curry leaves and dry red chillies.

Add cooked ivy gourd and mix well.

Add chilli powder, coriander powder and saute everything for about 10 - 15 minutes.

Turn the flame off and serve hot with rice.
