Vendakka / Okra / Lady Finger Stir Fry

Preperation Time: 10 min.

Vendakka/Okra - 300 gms, cut lengthwise

Onion - 1 small, thinly sliced

Mustard seeds - 1/2 tsp

Salt - to taste

Curry leaves - 1 stem

Chilli powder - 1 tsp or to taste

Oil - 3 Tbsp

Preparation Method

Wash and pat dry okras and cut length wise. (as shown in the 2nd picture)

Heat oil in a non stick pan and splutter mustard seeds.

Add onion and saute for couple of minutes.

Add vendakka/okra, cover and cook on a medium flame for 3 - 4 minutes.

Add salt and cook for another 2 - 3 minutes covered.

Then add chilli powder, curry leaves and fry uncovered until it turns a dark brown color. Add oil if required. (stirring occasionally)

Serve hot with rice.
